The chef prepares a different menu every day using fresh, seasonal ingredients. He offers high-quality dishes prepared on-site and regional specialties that will satisfy both gourmets and those who appreciate traditional cuisine: veal blanquette, veal liver à la lyonnaise, duck breast with Alpine honey, beef tenderloin with chimichurri sauce... not to mention the famous Farcement de Cordon. Local fish are also featured, such as perch fillets and lavaret from Lake Bourget.
